Cranberry Walnut Breakfast Cookies

1 cup Sugar or Fructose
2 1/2 cups organic rolled oats
2 cups all purpose flour
1 3/4 cups whole wheat flour
1 tablespoon baking soda
1 teaspoon baking powder
1 teaspoon Himalayan Crystal Salt
1 1/2 teaspoons Organic Cinnamon
1/4 cup Pumpkin Seed Oil
1 cup Applesauce
2 tablespoons water
5 egg whites
1 1/2 teaspoons vanilla
3/4 cup Organic Dried Cranberries
1/3 cup Organic Walnuts, chopped
1/3 cup Organic Dried apricots, chopped

Preheat oven to 350° F. Combine sugar/fructose, oats, all purpose flour, wheat flour, baking soda, baking powder, salt and cinnamon.
Stir in pumpkin seed oil, applesauce, water, egg whites and vanilla.
Mix in cranberries, walnuts and chopped apricots.

Drop batter by the tablespoonful onto baking sheets and bake 8 to 12 minutes or until golden brown.
Let cookies cool on wire racks. Store in refrigerator.

Makes 3 dozen cookies. Serving size 1 cookie.
